North, South, East, West

In Trine 1, you basically went in one direction, West to East. Why not add a few more directions. Some levels could start from the East and need to go West. Some levels could have paths going North and South, take that path and the screen could rotate to a side view. with North and South, the levels could be huge. Maybe they aren't necessary, maybe they would just have more items/treasures. Could even have a level where you may need go East, then Down or up, then back West and exit above or below where you entered, like a giant tree or tower.

I think it's just for consistency. All sidescroller games seem to go to the right, and if you add other directions the levels could get too massive to make with a low budget and not a lot of time.

making levels big also has an impact on preformance and system requirements unless you start to load segments of the level dynamicly witch causes a lot of problems on it own.

Thrine 1 did have levels that go up like the last level and path of the new dawn. there where also part where you had to go to the left for some tressure

We experimented with some simple "turns" for the camera in the early days of Trine 2 development (and even Trine 1 actually) but it had too many problems. It's a cool idea and might work if enough time is given to fix all the bugs, but we decided to focus on other cool things instead, and I think it was the right decision.

As for the east-to-west progression, Trine 2 will continue on that path. Parts of the levels will go up and down, but it's mostly to the right. It keeps consistency and helps to keep the player going in the right general direction. (And I'm by no means saying doing it the other way would be a bad thing as such, but we have decided to keep it simple this time.)
